Saturday Jeff went out on some bachelor party hike in the mountains thing, so I made an omelet with leftover artichokes and some parmesan. I made the omelet Juuuuulia's way, so I was pretty prepared for disaster. In fact, my mental plan to call it scrambled eggs was well in place.

My big mistake was overheating the pan, which burnt the butter a bit. Instead of throwing it out and starting with new butter, I used it, giving me a brown/black on the outside omelet. That was my only mistake, though. Julia's method is actually easier than any other I've used. Easier! It was the most perfectly shaped omelet I've ever made in my entire life.
