Anyone have a good recipe for smoked trout spread? I have a million cookbooks, none of which seem to have a recipe for it. I assumed that would be the sort of thing Whole Foods would sell and was fully prepared to just buy some, but, no.

I wound up mixing up some lemon juice, scallion, smoked trout, and sour cream with some parsley, which is fine, but it's much more of a smoked trout dip.
